Inoculated Process – Single Estate Catuai:
This 100% Single Estate Catuai was processed using a yeast-inoculated method. After pulping, the beans underwent a dry fermentation with Vin 13 yeast for 114 hours, followed by washing and sun-drying. This method brings out a fruity-floral-winey fragrance, light sweetness, and a long, juicy finish.
Roasting Notes:
We recommend exploring light to medium roast levels to fully appreciate the complexity and nuance brought out by the inoculated fermentation. Darker roasts may mask the delicate florals and winey acidity that make this coffee so special.
